Banoffee Cupcakes

Banoffee cupcakes: moist sponge, luscious banana flavour dulce de leche filling, and creamy banana cream cheese frosting. Topped with a drizzle of caramel. Pure bliss in every bite!

Ingredients

Cupcakes

  • 200g (¾ cup + 2 tbsp) unsalted butter, softened
  • 200g (2 cups) granulated sugar
  • pinch of salt
  • 1 tsp vanilla extract
  • 4 medium eggs
  • 200g (1½ cups + 2 tbsp) self-raising (self-rising) flour, sifted - see notes
  • 70g (2.5 oz) dark chocolate, chopped. (or 1 cup of chocolate chips)

Dulce de Leche Filling

  • 200g (¾ cup or 7 oz) dulce de leche (or soft caramel)
  • 1 large ripe banana

Banana Cream Cheese Frosting

  • 200g (¾ cup + 2 tbsp) full fat cream cheese
  • 200g (¾ cup + 2 tbsp) unsalted butter, softened
  • 500g (4 cups) icing (powdered) sugar, sifted
  • 50g (1.8 oz or around 1 average-sized) ripe banana, mashed

Instructions

  1. To make the cupcakes, preheat the oven to 175°C/345°F/Gas Mark 4. Place cupcake cases into the muffin tray.
  2. Add the butter, sugar, salt and vanilla into a mixing bowl and beat together until pale and fluffy - around 5-minutes.
  3. Add the eggs, one at a time, while whisking quickly. If the mixture starts to separate or curdle, add in 2-3 tbsp of flour to rebind.
  4. Once all the egg has been incorporated, add the remaining sifted flour and stir until the batter is just combined. Fold in the chopped chocolate (or chocolate chips) using a rubber spatula.
  5. Spoon or pipe the batter into the cupcake cases around ⅔ full.
  6. Bake for 12-15 minutes until the cupcakes are a golden brown colour and spring back to the touch and/or when a skewer inserted comes out clean.
  7. Allow the cupcakes to cool in their tray before turning out to cool completely. Once cool, wrap the cupcakes in plastic wrap and chill for 1 hour or until the sponge feels firm to the touch.
  8. Core the cupcakes by scooping out the tops of each cupcake. Set aside.
  9. To make the banana flavoured dulce de leche filling, Using a fork, mash the ripe banana and then mix it together with the dulce de leche.
  10. Spoon or pipe the dulce de leche to fill the scooped-out holes of the cupcakes.
  11. To make the banana cream cheese frosting, add the cream cheese into a mixing bowl and beat until smooth and creamy, then add the butter and icing (powdered) sugar beat together until very pale and fluffy. Mash the banana with a fork and beat into the frosting until well incorporated.
  12. Chill the frosting in the refrigerator until it firms to a piping consistency - do not skip chilling the frosting.
  13. Once the frosting is the correct consistency, using a large plain round or star piping tip, pipe swirls onto each cupcake.
  14. Serve with a drizzle of caramel sauce or any leftover dulce le leche. Store leftovers in the refrigerator for up to 3-4 days.

Notes

Don't have self-raising flour? Substitute with plain (all-purpose) flour in the same quantity, and add an additional 2 teaspoons of baking powder into the flour.

I've been in bed with the flu all week, so I totally feel you on that score; not being able to step in the kitchen and look at food for more than 5 seconds without wanting to hurl is *not* conducive to happy campers around the house.
