Chocolate Funfetti Cake Batter Rice Krispie Treats

These Chocolate Funfetti Cake Batter Krispie Treats are perfect if you're in the mood for crunchy chocolate with a cake batter flavour twist. Made using Coco Pops (Cocoa Krispies in the US), this recipe replicates the flavour of cake batter without the need for any cake mixes.

Cook Time 5 minutes

Ingredients

  • 45g (3 tbsp) unsalted butter
  • 10oz marshmallows
  • 390g (6 cups) coco pops (cocoa krispies) cereal
  • 1 tsp almond extract
  • 2 tsp vanilla extract
  • 85g (Β½ cup) rainbow jimmie sprinkles
  • 2 tbsp rainbow nonpareils sprinkles (or jimmie sprinkles)

Instructions

  1. Grease or spray a 13×9 inch pan with non stick spray.
  2. In a large sauce pan, melt butter over a low heat. Once melted, add marshmallows and stir continuously until completely melted. Remove from heat and add the vanilla and almond extracts then immediately add the coco pops (cocoa krispies). Stir until well coated.
  3. Mix in the sprinkles and evenly press the mixture into the pan either using a greased spatula or parchment paper. Evenly sprinkle the remaining 2 tbsp rainbow sprinkles on the surface pressing into the mixture slightly to adhere.
  4. Allow to cool then cut into 2″ squares.

      I know, right?! I've never tried Rice Krispie treats until now. It was another one of those US things that finally made its way here. They now sell them in the stores but forget that when you can add your own flavours! I loved using the chocolate krispies too, yum.

      I think you're just as sprinkle happy as me, Sally! But a bowl of sprinkles? Replacement for cereal? Oh gosh, you're giving me ideas now. I might as well have a bowl of sugar [and trust me, that'd go down well too!]

      I just had to have the chocolate in the cake batter too. Pesky cravings do work out great sometimes. :)

      Me neither! But a while back i found out that you can replicate the flavour of cake batter without the need for box cake mix by using a little almond and vanilla extract. I'm not anti-box mixes, just that I prefer to make from scratch and this was a great no box mix alternative. :) And sprinkles make the world a better place. :)
