Funfetti Cake Batter Cookies

These Funfetti Cake Batter Cookies tastes like cake batter, but without the box mix! My kids raved about these cookies, and loved the crunch from the sprinkles!

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 280g (1¼ cups) sugar
  • 2 tsp vanilla extract
  • 1 tsp almond extract
  • 1 egg
  • 315g (2½ cups) plain (all-purpose) flour
  • 30g (¼ cup) cornflour (corn starch)
  • ¾ tsp bicarbonate of soda (baking soda)
  • ½ tsp salt
  • ½ cup rainbow ‘jimmie’ sprinkles
  • 2 tbsp rainbow ‘nonpareils’ sprinkles

Instructions

  1. Preheat the oven to 190°C/375°F/Gas Mark 5, and line 3 baking sheets with parchment paper or silicone baking mats.
  2. Cream the butter and sugar until light and fluffy. Add the vanilla, almond, and egg, and beat until well combined.
  3. In a separate bowl, sift the flour, cornflour (corn starch), bicarbonate of soda (baking soda) and salt. Slowly add the flour mixture to the butter mixture and continue on low speed until just combined. Mix in the sprinkles (don’t over mix as the sprinkles will bleed their colours).
  4. Using an ice cream scoop, scoop cookie dough onto baking sheets, approx. 1½ inches apart to allow for spreading - 8 cookies per sheet. Bake for approx 10-15 minutes or until a very light golden brown colour.
  5. Cool on the tray for 5 minutes before transferring to a wire rack to cool. Store in an airtight container.

    GAH! I love this, Lisa! Funfetti is amazeballs, and so are these cookies. Sprinkles make the world go round; it's a fact. Also, the more, the better :) one day, you need to get a package from me filled with Funfetti.
