Raspberry Yogurt Parfait

Raspberry Yogurt Parfait

This Raspberry Yogurt Parfait is perfect for hot summer days like today. It's healthy too with only 2-3 ingredients needed, and ready in under 5 minutes!

Ingredients

  • 2/3 cup low-fat natural yoghurt, divided
  • 2 tbsp raspberry conserve
  • 2 tbsp fresh or frozen raspberries, optional
  • 1 tbsp granulated sugar, optional

Instructions

  1. Optional - Turn the glass upside down and wet the rim equally and dip it into plain or coloured sugar. I didn’t do this step but wish I had after.
  2. If using a wine glass, place a few raspberries at the bottom. For flat-bottomed glasses, jars, etc. place enough raspberries to cover the bottom, reserving one. Spoon enough natural yoghurt into the bottom to cover the raspberries to create a layer.
  3. In a small bowl, add half of the natural yoghurt and add 1-2 tbsp of the natural conserve and stir to combine. Add more conserve if necessary to your taste. I used around 2 semi-heaped tablespoons of raspberry conserve to my taste - I like mine sweeter! πŸ™‚
  4. Layer the yoghurt and raspberry yoghurt in alternating layers of mixed and unmixed yoghurts, ensuring that when you nearly reach the top, the last layer is unmixed natural yoghurt.
  5. Roll the remaining raspberry in the leftover sugar and add on top of the yoghurt as a garnish. Serve immediately.

Notes

  • Feel free to mix it up with different flavour conserves. Or if you don't have any conserves in, gently simmer the fruit with some sugar on the stovetop until the juices start to thicken, and stir in a small amount of cornflour (cornstarch) to make your own fruit fillings. Blueberry and lemon would be an amazing combo.
  • It's completely optional whether you want to use fruit rolled in sugar. If using fresh fruit, dampen slightly and then roll in the sugar. Frozen fruit will already be damp from thawing.

    By the way, I think that where I live follows the same climate as London. It has been raining all summer, until now. Now it's SO hot. And people keep complaining everyday. No one is ever happy.
    ...Until they try this yogurt. Or wear a tank top revealing a hairy back and beer belly :p
