Amaretti Rhubarb Crumble

Amaretti Rhubarb Crumble

Delicious sharp rhubarb sweetened with vanilla sugar, and topped with a sweet amaretti crumble topping. Comfort food at its best.

Cook Time 40 minutes

Ingredients

  • 500g rhubarb
  • 50g vanilla sugar
  • 200g plain (all-purpose) flour
  • 130g unsalted butter, chilled and cubed
  • 100g demerara sugar
  • 50g amaretti biscuits

Instructions

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Peel (if needed) and trim the rhubarb into 5cm (2-inch) pieces. Place on a baking tray, sprinkle with the vanilla sugar and bake in the preheated oven for about 10 minutes until just tender. Remove from the heat and cool.
  3. To make the crumble, combine the flour, butter, demerara sugar and biscuits into the bowl of a food processor and pulse until you have a crumble texture.
  4. Spoon the rhubarb into a 23cm (9 inch) round dish, sprinkle over the crumble topping and bake for 30-35 minutes until the fruit is bubbling and the crumble is golden.
  5. Leave to stand for 5 minutes before serving with extra-thick cream, ice cream or classic custard.

Notes

NOTES:

Demerara sugar in the UK is very similar to the US turbinado sugar. However, you can easily substitute with light brown sugar instead.

    This looks delicious, I absolutely love rhubarb crumble. The sharpness of the fruit against the sweet crumble top is amazing. With lots of custard of course! I love your Cath Kidston napkin, I was at St Pancras station with my husband the other day and he did have to drag me away from the CK shop they have there :-)

    I love anything with rhubarb in it and it also reminds me of my childhood. I remember just picking it straight from the plant and dipping it in a bowl of sugar! Making it into a crumble or crisp is my favorite now, as an adult!

    Sooo don't judge me but I've never tried rhubarb. Ever. In my life. I'm so intrigued but no one that I know cooks/bakes with it so I've never been able to experience it. This crumble looks divine though Lisa so maybe this can be my crash course in rhubarb baking! :D

    That crumble looks fantastic! Would you believe that I only just discovered rhubarb??? A food nerd like me? It's disgraceful, really, I should be ashamed. However, after the first bite it became my absolute favorite. I tried it in a pie with strawberries and ever since, I can't wait for Spring so I can eat it again! I've been scoping out the produce department for a month now! Your recipe sounds awesome with the amaretti- what a stellar combo. Can't wait to try it out!
