I hope you’re all enjoying your special day today. I got some wonderful flowers from my beautiful girls, which are taking pride of place on the mantle right now. ๐

Yup, that’s right, I officially celebrate Mother’s Day twice! Officially today, and unofficially in May with my US buddies. ๐

Speaking of my US friends, I see sooooo many sweets n’ treats that we can’t get here in the UK.
Let’s talk about Girl Scout Cookies… I spot, I salivate, I feel immense happiness, which is quickly followed by sadness.
No availability in the UK. Well, that’s not entirely true, I could get a pack off Amazon if I were so inclined to remortgage my house for a pack!
What was a girl to do? Desperate times call for desperate delicious measures.
I decided to go for an amazing Samoa inspired rice krispie treats. Who doesn’t love rice krispie treats? I headed down to Sainsbury’s to grab the Rice Krispies and other ingredients. In fact, I’d recommend picking up the Kellogg’s brand of Rice Krispies for maximum ‘krispiness’! ๐
I wanted these Samoa Rice Krispie Treats to be true to their cookie form, with dulce de leche caramel, desiccated coconut, a drizzle of dark chocolate, and even a layer of dark chocolate at the bottom, too!

Samoa Rice Krispie Treats
Yield: 16 bars

Cook Time:5 minutes
Snack happy with these quick and easy, Girl Scout Cookie inspired, Samoa Rice Krispie Treats. Made with dulce de leech caramel, coconut, and chocolate.
Ingredients:
Rice Krispie Treats
- 45g (3 tbsp) unsalted butter
- 145g (½ cup) dulce de leche
- 285g (10oz) marshmallows
- 125g (1¼ cup) desiccated coconut
- 150g (6 cups) rice krispies cereal
- 270g (1½ cups) dark (semi-sweet) chocolate chips
Topping
- 45g (¼ cup) dark (semi-sweet) chocolate chips
Directions:
- To make the rice krispie treats, toast the coconut in a dry frying pan/skillet until lightly brown, tossing occasionally. This step is completely optional, but really amps up the coconut flavour.
- Line an 8x8-inch square pan with parchment paper, ensuring you leave a parchment overlap. Set aside.
- Melt the chocolate chips in the microwave on low, heating in 30-second blasts until completely melted and smooth. Set aside.
- In a large saucepan on a medium-low heat, melt the butter with the dulce de leche. Turn the heat down and add the marshmallows and stir until completely melted.
- Remove from the heat and add the coconut, followed by the rice krispies. Fold the mixture with a rubber spatula until evenly coated, being gentle not to crush the rice krispies.
- Press the rice krispie treats evenly into the pan, using a spatula or the bottom of a glass to help. Immediately pour the melted chocolate over the top of the rice krispie treats, and smooth the chocolate over the top. Place in the refrigerator to set.
- Once completely set, remove from the pan and invert (chocolate side down) onto a chopping board. Cut into bars.
- To make the topping, melt the chocolate in the microwave in 30-second blasts as before until smooth.
- Pour the chocolate into a small piping bag or a zip seal bag, snip the end off and drizzle on top of each bar.
- Allow to set before serving.
Notes:
You can use bar chocolate instead of chocolate chips if desired, but you may need to temper the chocolate first.

You can find the Kellogg’s Rice Krispies in the cereals aisle at your local supermarket.
In Sainsbury’s, they’re located opposite to the biscuit bars, and usually the cereal bars. You can’t miss that bright blue box box with those cute Snap, Crackle and Pop characters on it though!

How do you make your RK treats look so perfect? Mine are quite…”rustic” in comparison ๐ This is a delicious variation on a classic. Yum!
Colleen, I just packed them down in the pan gently without squishing and breaking up the Rice Krispies. I chopped them into bars upside-down since there’s a chocolate layer on the bottom which cracked if I chopped the right side up.
