Being a mum to 3 kiddos- all girls, means I rarely get to spend some much needed alone time.
My kidlets are growing up now. My youngest is 10, and the elder two (11 and 13) are both at secondary school (high school) now. *gasp*
In fact, Collette (the middle child), starts secondary school next month. We’re less than 2 weeks away and I still haven’t had time to buy her school uniform. Oh boy!
Sometimes I just feel as though the world is spinning way too fast and I can’t seem to keep up. There’s not enough hours in the day. Why can’t there be a day between Sunday and Monday? If there were, I’d love for it to be called Funday. Pretty much like Sunday’s used to be – no work, just play.
Maybe it’s because the kids are off school, but every time I turn around there’s eyes. It’s been ‘Mum’ this, ‘Mum’ that, and everything ‘Mum’ in-between! They’re like my very own personal stalkers. 😆
I’m absolutely exhausted!
I haven’t been on holiday (vaca) at all this year, and wow do I feel it. It would be so nice to be sat on a beach anywhere but here. Let’s imagine Barbados though. 🙂
Laying comfortably in a hammock between two palm trees watching the waves lap the shore, the smell of the sea, the sun beating down, and with a cocktail in one hand and a strawberry coconut ice pop in the other hand. Oh, and some hunky fellas cooling me with big bananas leaves too. Ahhh bliss.
But instead, I get to watch the summer from behind a big pile of ever growing laundry. Somehow being outside in the sun for 5 minutes bringing the laundry off the washing line just doesn’t even compare.
But at least I get to try a taste of all those exotic thoughts and dreams with these strawberry coconut ice pops instead.
Yep, that’s right, bringing the exotic to England! *snort*
These strawberry coconut ice lollies are made purely from coconut milk, strawberries and sweetened with honey, with a little vanilla too, for added flavour.
And one of the best things about these popsicles, other than the amazing flavour, is that they’re naturally flavoured. No added sugar.
So go on, bust out that swimwear that’s been hiding at the back of the drawer because summer is almost over.

Natural Strawberry Coconut Ice Pops
Yield: 6-8
Prep Time:20 minutes
Total Time:4 hours 20 minutes
These Strawberry Coconut Ice Pops are all natural and packed with flavour. No refined sugars. The perfect way to beat the heat this summer.
Ingredients:
- 250-300g (2 cups) strawberries, hulled and sliced
- 2 tbsp honey
- 360ml (1½ cups) coconut milk, full fat
- 2 tsp vanilla bean paste
Directions:
- Add the strawberries and the honey to a small saucepan, and heat gently to a simmer over a medium heat until the strawberries are soft. Remove from the heat and using a fork or a potato masher, mash the strawberries until the desired consistency. I liked a few larger chunks in there too, just not too large as they will sink. Set aside to cool to room temperature.
- In a bowl or a large jug, mix the coconut milk and the vanilla bean paste.
- Spoon some of the coconut milk mixture into the ice pop moulds, followed by some of the strawberry mixture until almost full, allowing a little room for the pop to expand during freezing.
- Repeat step 3 with the remaining pops, add the lolly sticks then freeze for at least 4 hours, preferably overnight.
Notes:
It’s best to use a regular ice pops mould with this recipe. I used this mold. The Zoko does not work well for these ice pops as it's designed to freeze on contact, creating air bubbles on the sides resulting in holes. Yes, we tried those at the same time.

Man I wish I could go on vacation and take a cooler full of these popsicles with me!
