Volcano Cookies Recipe

Prepared to be de-socked (is that even a word?) because today, I bring you some Deep Dish Molten Lava Chocolate Chip Cookies (AKA. Volcano Cookies) that’ll blow your socks off!

I’ve been wanting to make some molten lava cookies for a while. So when I caught wind of a recipe that made a deep dish version, I knew it was for me.

It was just perfect! We had chemistry, we had fun, and it was kind of like a summer holiday romance. Those memories will be with me forever.

The original volcano cookies recipe called for small unwrapped chocolates. I used small orange-filled chocolates – like this. That orange centre congealed with the chocolate during baking and created a gel-like orange-flavoured chocolate that stayed as a super thick liquid. It was heavenly. 🙂

But feel free to mix it up. You can use caramel-filled chocolates, peanut butter cups, or even a chocolate caramel like Riesen chocolate would be delicious. 🤤

  • Fats: Unsalted butter provides moisture and flavour to the cookies.

How to Make Volcano Cookies

  1. Prep: Preheat oven, and grease pans.
  2. Mix: Cream butter, and sugars; add eggs and vanilla; mix in baking soda, salt, and flour; add chocolate chips.
  3. Assembly: Press dough into pan cavities, add chocolates, and cover with more dough.
  4. Bake: Bake until golden edges.
  5. Cool: Rest in pan for 10-12 mins, then remove.

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 200g (1 cup) light brown sugar
  • 100g (½ cup) granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp bicarbonate of soda (baking soda)
  • 1 tsp salt
  • 315g (2½ cups) plain (all purpose) flour
  • 135g (¾ cup) milk chocolate chips
  • 135g (¾ cup) dark chocolate chips
  • 10 -20 (depending on size) unwrapped milk chocolates

Instructions

    1. Preheat oven to 180°C (350°F) Gas Mark 4. Spray a muffin top pan (or in my case, a whoopie pie pan) generously with cooking spray, set aside.
    2. Using an electric mixer, cream together butter and both granulated and brown sugars until light and fluffy.
    3. Add in the eggs, one at a time, and the vanilla extract. Mix on medium until combined.
    4. Turn the mixer to low speed and add the bicarbonate of soda (baking soda), salt and plain/all-purpose flour. Stir until just combined
    5. Stir in both the milk chocolate and the dark/plain chocolate chips and mix until incorporated.
    6. Press ¼ cup dough (less if using a whoopie pie pan) into each cavity in the pan.
    7. Press 1-2 unwrapped chocolates (depending on size) into each cookie and cover the chocolates completely using approx. ⅛ cup more dough.
    8. Bake for approx. 9-12 minutes (smaller cookies will bake faster) until edges are golden brown.
    9. Let cool in the pan for 10-12 and gently loosen sides with a knife and twist out, or flip the pan over onto a cooling rack.

Notes

  • These Volcano Cookies can be made without the muffin top or whoopie pie pan on a baking sheet, but reduce baking time to approx. 8-9 minutes.
  • Best served warm. Top with ice cream and if desired, drizzle with chocolate, caramel, or toffee sauce.
  • Leftovers can be reheated in the microwave for approx. 15-30 seconds per cookie.
