I had the wonderful opportunity to go to Nottingham’s City centre yesterday. Note the sarcasm. 😆
I mean, I love shopping as much as the next girl, but my plan of going to the city centre at 4pm, thinking it would totally be nice and quiet failed.
Let’s just say it is one of the busiest times with everyone rushing around trying to make their way home.
Since I have an invisible illness, no-one is able to tell I’m not so steady on my feet. Either that, or people just don’t care anymore, because the amount of times people literally push past you in a hurry is such a pain — literally!
I feel like getting myself a mobility scooter for these types of occasions. Would it be so bad of me to mow down those ignorant peeps? Muahhaaaha.
But if you can’t beat them, join them! 😆 I was on a mission to get to Waitrose in Nottingham. They’re the only supermarket which stocks Karo corn syrup, and well, I am running low. However, once I got there I quickly realised it was one of those mini supermarkets, and they only stocked the corn syrup at the larger store, not of which directly in Nottingham.
Ah well, I had better plans in mind. I was planning on making an exotic galette, but again, the little Waitrose didn’t stock any exotic fruits as the bigger ones did. I think a trip to the bigger Waitrose is definitely in order.
I thought I’d go for a classic with a twist, an apple and blackberry galette. 🙂
This apple and blackberry galette has perfectly seasoned apples and sweet juicy blackberries, then beautifully wrapped in a rich buttery flaky crust.
I love how blackberries just pop in your mouth. Sweet and tart, they certainly complement apples.
This galette is right up my alley with the flavour combo. What fruit combos do you like?

Apple & Blackberry Galette
Prep Time: 25 minutes
Cook Time: 50 minutes
Yield: 9-10" galette
This apple and blackberry galette is a British classic. Sweet blackberries paired with bramley apples makes one of the best flavour combos, and a family favourite.
Ingredients:
For the Pastry
- 1¼ cups (156g) plain (all-purpose) flour
- 6 tbsp (85g) unsalted butter, cold and cubed
- 2 tbsp (26g) shortening, cold and cubed, see notes
- 2 tbsp granulated sugar
- ½ - 1 tbsp ice cold water
For the Filling
- 2 bramley (cooking) apples, cored and sliced
- 225g (1 punnet) blackberries
- 2 tsp vanilla bean paste
- 150g (¼ cup) brown sugar
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp cornflour (cornstarch)
- 1 egg, beaten
- 2 tbsp vanilla sugar
Directions:
- To make the pastry, add the flour, butter, shortening, and sugar into a food processor and blitz until a breadcrumb consistency is reached. Then add the ice water until a dough forms. Roll into a 12″ circle between 2 layers of parchment and chill in the refrigerator for 15-30 minutes. Rolling between parchment paper first chills the dough faster.
- To make the filling, peel, core and slice the apples then place in a large bowl with the blackberries. Add the vanilla bean paste, brown sugar, cinnamon and nutmeg and fold in until it coats all the fruit.
- Transfer dough to a baking tray then brush the egg onto the chilled dough using a pastry brush. Spoon the fruits into the centre of the dough leaving a 2-3 inch border. Carefully fold up the sides tucking in over the fruit. Sprinkle the vanilla sugar over the dough then place in the freezer to chill again for 15 minutes.
- Meanwhile, preheat the oven to 190°C/375°F/gas mark 5.
- Bake the galette for 50-55 minutes until the crust is golden and the juice runs free.
- Allow to cool. Serve warm.

I love apple and blackberry, but only in season so we tend to eat lots of crumbles, pies and these in Autumn when we get crops off the farm/hedges.
I never knew they were called galettes though!
That’s the great thing about the supermarkets here, you can still fresh produce even when it is out of season. Gotta’ love that. I’m even thinking about having some strawberry, raspberry and blackberry bushes in my garden!
A galette is basically the same as a tart – a sweet shortcrust pastry base with the fruit layered on the top. They’re so much easier and quicker to make, yet have that fancy yet rustic look when baked.
