Ingredients

For the cupcakes

  • 200g (¾ cup + 2 tbsp) unsalted butter
  • 200g (1 cup) caster (superfine) or granulated sugar
  • 200g (1 ½ cups + 2 tbsp) plain (all-purpose) flour, see notes
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 2 large eggs

For the frosting

  • 250g (1 cup + 2 tbsp) unsalted butter, softened
  • 500g (4 cups) icing (powdered) sugar
  • 1-2 tbsp milk
  • few drops of gel colouring, optional

Instructions

    1. Preheat the oven to 180°C / 350°F / gas mark 4 and place cupcake cases into a cupcake pan.
    2. To make the cupcakes; cream the butter and sugar together in a large bowl until light and fluffy, then beat the eggs in one at a time, then add the vanilla and beat until well incorporated.
    3. Sift in the flour and baking powder and mix until just combined. Do not overmix.
    4. Spoon or pipe the mixture into the cupcake cases between ½-¾ full, then bake in the oven for around 15-18 minutes, or until a toothpick inserted comes out clean.
    5. Allow to cool in the pan for 5 minutes, then transfer the cupcakes to a wire rack to cool completely before decorating.
    6. To make the frosting; beat the butter in a large bowl until soft. Add icing sugar, a little at a time, and beat until smooth.
    7. Beat in the milk, if necessary, to loosen the mixture.
    8. (Optional) Stir in the food colouring until well combined.
