Yield: 12 peppermint creams

Egg free candy cane chocolate peppermint creams recipe. Crushed candy canes for decoration and inside the creams too. Smothered with dark chocolate too.

Ingredients:

  • 225g (1ΒΎ cups) icing (confectioners’) sugar
  • 115g (6 tbsp) sweetened condensed milk
  • 1 tsp peppermint extract
  • (optional) 2 candy canes
  • green food colouring
  • 55g plain/dark chocolate

Directions:

  1. Sift the icing (confectioner’s) sugar into a bowl. Add the sweetened condensed milk and mix until a sticky dough just starts to form. Add the peppermint extract and continue mixing to form a dough. If using, add 1Β½ crushed candy canes at this point.
  2. You can add more peppermint extract if you like. If so, you may need to add a little more icing (confectioners’) sugar if too sticky.
  3. Dust your hands, work surface and a rolling pin with more icing (confectioners’) sugar and roll out the dough to approx. 5mm thick (approx. ΒΌin).
  4. Using mini cookie cutters or a knife, cut out your shapes and allow to set for approx. 2-3 hours. Longer in humid conditions.
  5. Once set, melt the chocolate and either dip or drizzle over the peppermint creams. Sprinkle the remaining reserved Β½ crushed candy cane over the melted chocolate and allow to set.
  6. Enjoy.

    Okay, I'm STILL trying to process the fact that you dislike mint (!?!?!?) but I will forgive you because these cookies look super yummy. I love mint, and chocolate + mint are like, a match made in flavor heaven. Plus, these cookies are gorgeous!

      Yes, I'm one of those freaks of nature. The only mint I'll eat by itself is gum and I'd take Trident fruit flavoured any day over mint.

    oh my goodness. I will take umm... the entire batch please? Especially with a texture of fondant - I am embarrassingly in love with fondant. I've ruined cakes form eating off the fondant before. Whoops! And mint + chocolate is necessary. I need chocolate with it :)

      Me too Sally, me too! The last time I used fondant, I ate a fist sized ball of it! :oops: The peppermint creams are pretty much like fondant on the outside but creamy and melt-in-the-mouth-like on the inside. Either way, they're delicious. :)

    Now that you say that, I don't think I really like plain mint either...Unless it's gum. Obviously, I do like chocolate and mint together. You can hardly pry those flavors apart this time of year!

    So beautiful! I personally don't like dark chocolate and mint (though for some reason white chocolate seems to work splendidly for my finicky taste buds lol) BUT these are just so gorgeous I now wish I could try them. :)
