For the cupcakes

  • ½ cup cocoa powder
  • 1 cup boiling water
  • 1⅓ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp orange extract
  • zest of 1 orange

For the frosting

  • ¾ cup unsalted butter, softened
  • zest of 1 orange
  • 16oz powdered sugar
  • 2-3 tbsp orange juice


    1. Preheat oven to 190°C/375°F/Gas Mark 5. Lightly butter, or line 16 muffin cups with paper liners.
    2. To make the cupcakes; in a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature.
    3. In another bowl, whisk together the flour, baking powder, and salt.
    4. Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.
    5. Fill each muffin cup about two-thirds full with batter and bake for about 16 – 20 minutes or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. (Do not overbake or the cupcakes will be dry.) Remove from oven and place on a wire rack to cool.
    6. To make the frosting; once the cupcakes have completely cooled, beat the butter and the orange zest on medium speed with an electric mixer until creamy. Gradually add the icing sugar, beating until well blended.
    7. Stir in 2-3 tbsp orange juice, adding additional orange juice if necessary, to reach desired consistency.


If you do not have any orange extract, you can substitute it for vanilla extract. It will slightly mute the orange flavour in the chocolate cupcakes, but the orange buttercream frosting will complement the flavour.
