Summer is nearing its end. I’m not ready to let go of summer just yet, so to celebrate my favourite season, I whipped up this Pimm’s Fruit Trifle. It’s a modern twist on the classic British dessert and is perfect for those late summer gatherings or just because. 🙂

This summer treat combines layers of ladyfingers soaked in Pimm’s liqueur and fruit juices with fresh strawberries, raspberries, blueberries, blackberries, pineapple, and oranges (or mandarins, if preferred).

The addition of smooth vanilla custard and a crown of whipped cream creates a smooth texture, while the vibrant colours and garnish of fresh berries make it enticing.

A versatile no-bake and quick-to-prepare dessert, this trifle brings a taste of British elegance to any summer occasion, leaving your guests craving for more of its fusion of flavours.

How to Store Fruit Trifle

Refrigerate any leftover trifle in an airtight container, or covered tightly with plastic wrap. Consume within 2-3 days for the best taste and texture.

Can You Freeze Fruit Trifles?

Whilst freezing is not recommended for the best texture, you can freeze some of the individual components:

  • Fruit: Freeze in an airtight container. Thaw them in the refrigerator. Keep in mind that fruits with high water content, like berries, will become softer after freezing and thawing.
  • Custard: Freeze in a freezer-safe container. To prevent the formation of skin on top, cover the custard’s surface with plastic wrap before sealing the container. Thaw the custard in the refrigerator and give it a good stir before using.
  • Cream: Unfortunately, whipped cream does not freeze well and tends to lose its fluffy texture when thawed. It’s best to make fresh whipped cream when serving the fruit trifle.

Can I Substitute for Pimm’s Liqueur

Absolutely. If Pimm’s liqueur is not available in your country, or you prefer a non-alcoholic version, you can substitute with the following:

Alcoholic version

  • Sweet Vermouth: Sweet vermouth offers a slightly herbal and sweet flavour, similar to Pimm’s, that can work well in the trifle.
  • Fruit-Infused Vodka: If you prefer an alcoholic option, fruit-infused vodka can be a good choice. Opt for citrus or berry-infused vodka to enhance the fruit flavours.
  • Fruit-Flavoured Liqueur: You can use a fruit-flavoured liqueur; like raspberry, strawberry, or blackberry liqueur to add a fruity twist to the trifle.
  • Alcoholic Fruit Punch: Use a fruit punch blend that combines various fruit flavours. Look for blends that include citrus fruits and herbal notes to mimic the taste of Pimm’s.

Pimm's Fruit Trifle Recipe

Indulge in a refreshing summer fruit trifle recipe with a twist of Pimm's liqueur. Layers of fruits, custard, and infused with Pimm's for a delightful dessert!

Prep Time 20 minutes

Ingredients

  • 150g (1 cup) strawberries, sliced
  • 125g (1 cup) raspberries
  • 140g (1 cup) blueberries
  • 140g (1 cup) blackberries
  • 150g (1 cup) chopped pineapple
  • 150g (1 cup) chopped fresh oranges or mandarins
  • 125ml (½ cup) Pimm’s liqueur, see notes
  • 240ml (1 cup) double (heavy) cream, see notes
  • 2 tbsp icing (powdered) sugar
  • 100-200g package (7 oz) of ladyfingers, see notes
  • 480ml (2 cups) custard (store-bought or homemade)

Instructions

    1. In a large bowl, combine the strawberries, raspberries, blueberries, blackberries, pineapple, and oranges. Drizzle the Pimm’s liqueur over the fruits and gently toss to coat. Let the fruit mixture infuse for about 15 minutes.
    2. In a separate bowl, whip the double (heavy) cream and icing (powdered) sugar together until stiff peaks form.
    3. Arrange ladyfingers at the bottom of a 8-inch (20cm) or 9-inch (23cm) trifle dish or divide between individual serving glasses to create the first layer.
    4. Spoon a layer of the fruits over the ladyfingers, then pour half of the vanilla custard over the fruit layer.
    5. Add another layer of ladyfingers followed by the remaining fruits, then pour the rest of the vanilla custard over the fruit layer.
    6. Top the trifle with a generous layer of whipped cream, spreading it evenly.
    7. (Optional) Garnish with additional fresh berries and mint leaves for a pop of colour and freshness.
    8. Chill the trifle in the refrigerator for at least 2-3 hours before serving to allow the flavours to meld together.

Notes

  • Ladyfingers (aka. Sponge Fingers): You can substitute the ladyfingers for a sponge or pound cake in this recipe. Use around ⅓ to ½ of a standard 9-inch cake, depending on the size of your trifle dish(es).
  • The number of ladyfingers will vary depending on the size of the trifle dish or small individual trifle dishes. I used half of a 200g (7oz) package using an 8-inch trifle dish.
  • Pimm's: If Pimm’s liqueur is unavailable in your country, or you prefer a non-alcoholic version, you can substitute it with other options. Please refer to Pimm's substitution list in the post, above.
  • Cream: If you have a cream substitute in your country, such as Cool Whip, you can substitute this in place of the whipping cream in the same quantity.
