Prank your kiddos with lump of coal cookies. They’re sugar cookies made to look like a lump of coal. Safe, not to mention yummy too!

Ingredients:

  • 3 cups plain (all purpose) flour
  • 1½ tsp baking powder
  • 1 cup (250g) butter
  • 1 cup sugar (caster/super fine is preferred)
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp salt
  • black gel or paste food colouring

Directions:

  1. Preheat your oven to 180/350/Gas Mark 5. Prepare 2 baking sheets with parchment paper or a silpat.
  2. Cream sugar and butter together until light and fluffy. Add the egg and vanilla extract.
  3. Sift the flour and mix until a dough forms. Using a gel or paste food colouring, add food colouring a bit at a time until you get a dark coal-like colour.
  4. Divide the dough into 2 pieces and place one half in the fridge.
  5. Break off chunks of dough until your desired coal size. Roll or rough them up a bit and place on the baking tray. Place in the freezer while working on the second half of the dough and place in the freezer while the first batch cooks and repeat with the second batch.
  6. Allow to cool on the sheet for 10 minutes before transferring to a wire rack.
  7. Allow to cool completely before storing in an airtight container.
