This sugar cookie recipe is GREAT when using complex cookie cutters. The dough holds its shape and won’t spread during baking. These cookies have a buttery richness, delicate crumb, and a hint of vanilla.

Total Time 1 hour 23 minutes

Ingredients

  • 455g (2 cups) unsalted butter
  • 400g (2 cups) granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 750g (6 cups) plain all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt

Instructions

    1. Line 2-3 baking sheets with parchment paper. Cream butter and sugar until light and fluffy, then add eggs and the vanilla, mixing welll. Add the dry ingredients, a little at a time, until flour is completely incorporated and the dough comes together.
    2. Chill for 1 to 2 hours (or see hint in the notes).
    3. Preheat the oven to 180°C (350°F) for at least 30-minutes before baking the cookies.
    4. Bake for 8-10 minutes or until just beginning to turn brown around the edges. Repeat in batches until all cookies are baked. Cool the cookies on the tray for 5 minutes before transferring to a wire rack to cool completely.

Notes

Rather than wait for your cookie dough to chill, take the freshly made dough and place a blob between two sheets of parchment paper, then:

  1. Roll it out to the desired thickness then place the dough and paper on a cookie sheet and pop it into the refrigerator.
  2. Continue rolling out your dough between sheets of paper until you have used it all. By the time you are finished, the first batch will be completely chilled and ready to cut.
  3. Reroll leftover dough and repeat the process! An added bonus is that you are not adding any additional flour to your cookies.
