Red Velvet Mug Cookie Recipe

Fall in love with this single serving of red velvet bliss. This mug cookie is a quick and indulgent treat perfect for Valentine's Day.

Ingredients

  • 4 tbsp plain (all-purpose) flour, see notes
  • 2 tbsps unsweetened cocoa powder
  • 2 tbsps granulated sugar
  • ¼ tsp baking powder
  • pinch of salt
  • 3 tbsps milk
  • 1 tbsp vegetable oil
  • ½ tsp vanilla extract
  • red gel or paste food coloring (adjust as desired)
  • 2 tbsp mini chocolate chips

Instructions

  1. In a microwave-safe cup, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt using a fork until they are well combined.
  2. Stir in the milk, vegetable oil, vanilla extract, and red food colouring to the mug until a smooth batter without any lumps. Fold in the chocolate chips and add a pinch or two of sprinkles, optional.
  3. Cook in the microwave on high for about 1 minute and 30 seconds to 2 minutes. Keep an eye on it, as microwave cooking times may vary.
  4. Allow to cool for 10 minutes before serving. Or enjoy cold.
  5. Feel free to experiment with additional toppings or decorations to make the mug cookie your own. Ice cream or whipped cream works well.

Notes

  • You can substitute the plain (all-purpose) flour for self-raising in the recipe by omitting the additional baking powder.
  • You can also substitute the granulated sugar for white caster sugar also.
