Ingredients

  • 115g (½ cup) unsalted butter, melted
  • 225g (1 cup) granulated sugar
  • 3 medium eggs
  • 240ml (1 cup) freshly squeezed lemon juice (around 4 large lemons)

Instructions

  1. Melt the butter in a large microwave safe bowl in the microwave for around 1 minute to 1 minute 30 seconds, or until fully melted.
  2. Whisk in the sugar, eggs, and lemon juice, and whisk until smooth.
  3. Cook in the microwave on high in one-minute bursts, whisking well after each burst, until the mixture thickens enough that it coats the back of a spoon. This took around 6 minutes for me using a 800W microwave. The time may vary depending on your microwave's power.
  4. Once thickened, transfer into an airtight container or jar, pressing plastic wrap onto the curd to prevent a skin from forming. Refrigerate for at least 2 hours to cool and set.
  5. Once cool, remove the plastic wrap and replace with the lid.
  6. Can be kept in the refrigerator for up to 2-3 weeks, or in the freezer for longer.
