Rocky Road Bars - Packed with chocolate chips, chopped nuts and chocolate chips. Sure to satisfy every dessert craving!

Ingredients

  • 1 cup + 2 tablespoons (255g) unsalted butter, softened
  • 1½ cups (338g) granulated sugar
  • 2 eggs
  • ½ teaspoon salt
  • ¾ teaspoon baking powder
  • ⅔ cups (65g) cocoa powder
  • 3 cups (375g) plain (all-purpose) flour
  • 1 cup (175g) semi-sweet (dark) chocolate chips
  • 1 cup (about 5oz/140g) mini marshmallows
  • ½ cup (about 55g) sliced almonds (or your favourite nut, chopped)

Instructions

  1. Preheat oven to 350°F/180°C. Line a 9x13 baking pan with foil and spray with cooking spray. Set aside.
  2. Cream butter and sugar using a stand mixer. Add eggs and vanilla, mix. Add baking powder and salt and mix again. Stir in cocoa until well blended, then add the flour 1 cup at a time mixing between each addition. Stir in chocolate chips, marshmallows, and nuts.
  3. Press dough into prepared pan. Bake 25-28 minutes until edges start to crisp (middle will still be soft to the touch). Let cool completely before cutting into bars.
