OREO Stuffed Peanut Butter Chip Cookies
Let me tell you a little story about OREOsβ¦
Many, many moons ago on a cold night like tonight, I’d spend online as one of the administrators of a popular message board. An all woman message board. And about 85-90% American women, mainly parents. Boy did these women chat [and fight] but mainly they just talked about OREOs.
I wondered what these magical OREOs could be. I searched high and low in all the supermarkets to be disappointed. I cried into my Bourbon biscuits each and every night. π
Until a ray of light one day.
A birdie told another birdie, that told another birdie, [and so on] that told me that a mayor supermarket chain here in the UK, specifically Tesco sold them. So, happily I went to Tesco and looked… and looked. I even asked a member of staff, she looked at me like I were crazy and looking for a lost dog.
I went home and snaffled more Bourbon biscuits.
Then one day soon after, I was shopping and mysteriously found myself wondering into the cookie territory aisle, how did that happen? Before my very eyes beamed little blue packets of joyβ¦ OREOS! I must’ve looked like a crazy coupon lady, without coupons, clearing the shelf.
I went home and [happily] cried into my cookies. True story exaggerated slightly! π
When I came across a recipe for OREO stuffed chocolate chip cookies, I just knew in my heart it was right. I wanted peanut butter chips instead of regular chocolate chips and because the wonderful Dorothy from Crazy for Crust so thoughtfully sent me a pack of Reese’s peanut butter chips (we don’t get them here in the UK) and some nutter butters, I used the peanut butter chips as a substitute for chocolate chips.
I also under baked my cookies by a minute or two and they have come out perfectly chewy. The flavours combined are amazing!

OREO Stuffed Peanut Butter Chip Cookies
Yield: 24-26 large cookies
Prep Time: 15 minutes
Cook Time: 9 minutes
These OREO stuffed Peanut Butter Chip Cookies are cookies with a secret! Chewy and super indulgent, the OREO and peanut butter chips make for a delicious flavour combo.
Ingredients:
- 1 cup (226g) unsalted butter, softened
- β cup (125g) light brown sugar
- 1 cup (225g) granulated white sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 3½ cups (440g) plain (all purpose) flour
- 1 tsp salt
- 2 tsp bicarbonate of soda (baking soda)
- 10oz bag peanut butter chips
- 1 pack Oreos
Directions:
- Preheat the oven to 180°C/350°F/Gas mark 4. Line 3-4 baking sheets with parchment paper or a silicone baking mat, set aside.
- Cream the butter and sugar until light and fluffy then gradually add in the eggs and vanilla until well combined.
- In a separate bowl, sift or whisk the flour, salt and bicarbonate of soda (baking soda).
- Slowly add the flour mixture to the butter mixture until just starting to combine, then add in the peanut butter chips and mix on slow until just combined.
- Using a cookie scoop, take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal the edges together.
- Place the sealed cookies onto the prepared baking sheets and bake for 9-13 minutes, or until a light golden brown.
- Once baked, allow to cool on the tray for 5 minutes before transferring to a wire cooling rack to cool completely.
Tip:
With these cookies, I find it was best [2nd time around] to chill the pre-sealed dough in the fridge for 30 minutes, or alternatively in the freezer for 5-10 minutes, before baking. As you can see from the photos, mine look like flying saucers. If you chill the dough first, they shouldn't spread as much as mine did.

I know Joy, it’s such a tragedy! If only I had enough moolah to take a trip to the US just for the food. Mind you, I think I’d go over baggage allowance just on food, even if that meant going with nothing but my clothes on my back, it’d still be over! LOL.
